A Lighter Sponge

If you're always after the lighter sponge, don't be tempted to put in too much baking powder under the illusion that your cake will rise more. Sometimes a sunken cake can be the result of over-mixing, excess baking powder or opening the oven too soon!

People comment on the lightness of my sponge for the Fabulous Fairy Cakes. I count a steady 15 as I mix and allow 17 minutes in the oven, which is fan assisted. Happy baking...

Well...no offence, but hopefully not; if I can bake then I will. I love the whole thing! I like the decorating the most I think- the designer in me. Love 'making' things. I relish the challenge and adore the embellishments that you can use on cakes. Flowers are my latest thing, oh and butterflies, they look soooo cute! The cupcakes sell really well, especially my fabulous fairy sponge, who knew I was destined to bake?
